Raw Vegan Tacos

These raw vegan tacos are light and delicious! They are an easy afternoon snack or portable lunch. Prep all the ingredient ahead of time for a quick and healthy weekday meal!

  • 1 cup nuts/seeds (whatever you have in your pantry! I like 1/2 cup walnuts, 1/2 cup almonds)
  • 1/2 cup sun-dried tomatoes (dried, not canned) – soak in water for about 30 min (no longer than 2 hours or they’ll be too mushy :/ )
  • 3 dates – pitted – soak with sundered tomatoes
  • 1 large portobello mushroom cap – chopped
  • Splash of grape seed oil (or any other neutral flavored oil)
  • splash of tamari (sub GF soy sauce or coconut aminos)
  • Salt and pepper to taste
  • 2 tsp. Cumin
  • 1 Tbsp. Chilli Powder
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Coriander
  • 1/4 tsp. Cayenne (add more to increase spiciness)
  • Dash of cinnamon
  • optional – tablespoon pico de gallo or salsa
Vegan “Sour Cream”
  • 1/2 cup raw cashews – soaked for at least 2 hours and up to 8 hours
  • 1/3 cup filtered water
  • 1 tsp. lemon juice
  • 1 tsp. raw apple cider vinegar (ACV)
  • 2 tsp. nutritional yeast
  • 1/4 tsp. salt
Toppings – optional
  • Fresh Salsa
  • guacamole
  • lime
  • purple cabbage
  • sliced bell pepper
  • thinly sliced red onion
  • corn or corn salsa
  • cilantro
  • tortillas of choice or lettuce wraps (romaine or butter lettuce)
  1. Drain the sun-dried tomatoes and dates – add them to food processor with half of nuts/seeds, mushroom cap, grapeseed oil, and tamari – pulse until well incorporated
  2. Add other half of the nuts/seeds along with salt & pepper, cumin, chili powder, garlic powder, coriander, cayenne and cinnamon – then add pico de gallo or salsa if using – pulse until mixture has appearance of ground taco meat
  3. In a high speed blender, add all the ingredients listed under “Vegan Sour Cream” and blend on high until a smooth, creamy mixture forms. (adjust spices for desired flavor – lemon or ACV for acidity, nutritional yeast for cheesiness, and salt for more overall flavor)
  4. To assemble: prepare lettuce wraps or tortilla shells and fill with taco “meat,” veggies, and sour cream! Add any of the toppings listed above for added flavor and texture or add your own favorite taco toppings!
