Layered Blackberry & Strawberry Cashew Cheesecake (V) (GF)

Calling all sweet-toothed health enthusiasts! This decadent dessert is vegan and gluten free! Yes, that means it’s a zero-guilt dessert.. what more can you ask for?!

Crust

  • 1 box of gluten -free graham crackers
  • 1/3 cup melted coconut oil

First Filling Layer (Blackberry)

  • 1 cup raw cashews – soaked overnight
  • 1/2 a lemon’s juice
  • 2 1/2 tbs. coconut oil
  • 1/4 cup maple syrup – or more if you want more sweetness!
  • 1/2 teaspoon vanilla extract
  • 1 cup of fresh blackberries – set a few aside for toppings
  • optional – use 1/2 tsp. nutritional yeast flakes for more cheesy taste

Second Filling Layer (Strawberry)

  • 1 cup raw cashews – soaked overnight
  • 1/2 a lemon’s juice
  • 2 1/2 tbs. coconut oil
  • 1/4 cup maple syrup – or more if you want more sweetness!
  • 1/2 teaspoon vanilla extract
  • 1 cup of fresh strawberries – set a few aside for toppings
  • optional – use 1/2 tsp. nutritional yeast flakes for more cheesy taste

Directions 

  • Finely crush graham crackers in a food processor while slowly adding the coconut oil
  • Grease bottom of baking pan with coconut oil and press the graham cracker mixture to the bottom making sure it’s smooth and equally distributed across the pan – place in freezer while starting first filling layer.
  • First Layer – place the soaked cashews, lemon juice, coconut oil, maple syrup, vanilla, blackberries, and nutritional yeast flakes (if using) in a blender* – blend till creamy and smooth.
  • Add blackberry filling to pan and place in freezer for 30 minutes.
  • While blackberry filling is setting in the freezer, blend the Second Layer (strawberry) in a blender*- place soaked cashews, lemon juice, coconut oil, maple syrup, vanilla, strawberries in a blender, and nutritional yeast flakes (if using) – blend till creamy and smooth.
  • Add the strawberry filling to the pan on top of the blackberry filling – let freeze for 4 + hours – then dig in!

Notes

  • * a high speed blender is highly recommended for a smooth and creamy texture
