Lentil Sloppy Joe’s 

The first round of exams are officially here and comfort food is a must. Here is a lentil sloppy joe recipe that will calm all of your pre-exam jitters and is food for the soul.

* makes 4-6 sloppy joe’s

Ingredients 

  • 1 cup green lentils
  • 2 cups vegetable broth (or 2 cups water)
  • 1 Tbsp. coconut oil
  • 1 large green or red bell pepper – diced
  • 1 yellow onion – diced
  • 2 cloves of garlic – chopped or minced
  • 1 15 ounce can tomato sauce
  • 1-2 Tbsp. coconut palm sugar (or your favorite natural sweetener)
  • 1-2 Tbsp. vegan worchestire sauce (sub. regular worchestire sauce if not vegan)
  • 1 Tbsp. apple cider vinegar
  • 2 tsp. cumin
  • 2 tsp. chili powder
  • 1 tsp. paprika
  • salt and pepper to taste
  • Gluten-free hamburger buns (or whole wheat hamburger buns if not GF)
  • optional – cole slaw for topping
  • optional – thinly sliced onions for topping

Directions 

  1. Place lentils and broth (or water) in medium pot over heat – bring to a boil and then simmer for about 20 min. or until the liquid has evaporated
  2. In the meantime, heat a large skillet over medium heat – add coconut oil, garlic, onion, bell pepper, salt and pepper – stir until onions are translucent
  3. Now, add the tomato sauce, coconut palm sugar, vegan worchestire sauce, apple cider vinegar, cumin, chili powder, and paprika
  4. When the lentils are cooked, stir them into the tomato sauce mixture and cook on low heat for 10 minutes or until the mixture has thickened
  5. Serve on a gluten-free or whole wheat hamburger bun with your favorite cole slaw or thinly sliced onions!
