Twice-Baked Samosa Potatoes

This twist on Twice-Baked Potatoes will be your newest obsession! This dish incorporates all the classics herbs and spices typically found in Samosas. Samosas are an Indian dish that traditionally consists of a crispy deep-fried pastry stuffed with a mixture of potatoes, vegetables, ginger, and curry spices. Our take on this classic dish has all the flavor and ditches all the unhealthy fats and carbohydrates associated with the fried pastry dough. You will not be disappointed!   • 2 russet potatoes – scrubbed clean and dried
  • 1-2 Tbsp. olive oil
  • 1/2 yellow onion – diced
  • 1/2 c. frozen organic peas & carrots mixture
  • 1 clove garlic – minced
  • 1 inch piece ginger – minced
  • 1 1/2 tsp. curry powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground mustard seed
  • 1/4 tsp. garlic powder
  • 1/8 tsp. cayenne
  • sea salt & pepper to taste
  1. Preheat oven to 450F
  2. Scrub and rinse potatoes to remove any dirt – pierce surface of potatoes using a fork
  3. Bake for about 1 hour or until potatoes are easily pierced through with a fork – set aside to cool
  4. Meanwhile, prep your samosa filling – add 1 Tbsp. olive oil to large skillet over medium heat
  5. Once hot, add diced onion and peas & carrots mixture – sauté until onions are translucent and the peas & carrots are cooked through
  6. Add more olive oil if the pan is too dry, then add garlic and ginger – sauté for about 2 more minutes on medium heat, until fragrant
  7. Add curry powder, cumin, mustard, garlic powder, cayenne, sea salt, and pepper – mix to combine and sauté for 1 more minute
  8. Remove pan from heat and set aside
  9. Once potatoes are cool enough to handle, cut them in half and carefully scoop out the inside of potatoes without damaging the skins – add to large mixing bowl and mash
  10. Add samosa filling to mashed potatoes and incorporate well – taste and adjust seasonings to your liking
  11. Stuff the potato skins with the samosa potato filling and drizzle with a bit of olive oil for added crispiness – return potatoes to oven and bake for 10 minutes
  12. Serve immediately – top with Spicy Green Chutney and Coconut Yogurt Raita and enjoy!
  13. Leftovers will last in container for up to 5 days – reheat in oven
