Chocolate Chia Pudding

It’s both tasty and a super healthy source of complete proteins, healthy fats, and important minerals. The cacao and maple syrup give the pudding its heavenly flavor while the coconut milk and chia seeds create a creamy, pudding-like texture. Prep this easy recipe over the weekend and enjoy it for breakfast or a snack during your busy week!


  • 1 cup full fat coconut milk
  • 2 Tbsp. cacao powder
  • 1/2 tsp. vanilla extract
  • 1 Tbsp. 100% pure maple syrup – or sweetener of your choice
  • pinch sea salt
  • 3.5 Tbsp. chia seeds
  • optional – 1 tsp. maca powder – adds a malty flavor and important nutrients
  • optional toppings – walnuts, sliced bananas, berries, shredded coconut
  1. Place coconut milk, cacao powder, maca powder (if using), vanilla extract, maple syrup, and sea salt in a mason jar or sealable container
  2. Place lid on jar or container – shake mixture to combine
  3. Add chia seeds to liquid mixture
  4. Place lid on jar or container again – shake mixture to combine
  5. Place in fridge to set for at least 4 hours or up to 5 days
  6. Top with your favorite nuts, fruits, or shredded coconut – enjoy!
