Southwest Quinoa Salad

This Southwest Quinoa Salad has all the flavors you crave in your favorite burrito! It’s loaded with nutrient dense ingredients like quinoa, black beans, avocado, and lots of veggies. The creamy Cilantro Lime Dressing pairs perfectly because it cools off the heat of the Pickled Jalapeños and cayenne. It’s a great meal prep recipe since all ingredients can be made ahead of time and stored up to 5 days! Enjoy warm or cold depending on your mood:)


Quinoa Salad

  • 1/2 cup uncooked quinoa
  • ~1 cup vegetable stock – or sub water (depends on brand of quinoa)
  • 1/2 cup black beans
  • 1 red bell pepper – sliced
  • 1 green bell pepper – sliced
  • 1 red onion – sliced
  • 1 avocado – chopped
  • 2 green onions – thinly sliced
  • chili powder
  • cumin
  • garlic powder
  • paprika
  • cayenne
  • sea salt
  • 1 Tbsp. olive oil
  • 2 Tbsp. pico de gallo – store bought or make your own
  • small handful of cilantro – stems removed and chopped
  • Pickled Jalapeños (to taste) – or store bought

Cilantro Lime Dressing

  • 1/2 bunch of cilantro – stems removed
  • 1/2 cup Coconut Yogurt – or store bought
  • 4 cloves garlic – peeled and minced
  • 1/4 cup olive oil
  • salt & pepper – to taste
  1. Preheat oven to 425F degrees – to roast veggies
  2. Make quinoa:
    1. follow package instructions and use vegetable stock in place of water for more flavor (this is optional, water will work too)
  3. Roast vegetables:
    1. place red pepper, green pepper, and red onion in shallow baking dish or sheet pan
    2. add chili powder, cumin, garlic powder, paprika, cayenne, sea salt, and olive oil – combine and place in oven for 20-25 minutes until sightly charred
  4. Dressing:
    1. add cilantro, coconut yogurt, garlic, olive oil, salt, & pepper to blender or food processor – blend until smooth and well combined
  5. Prepare toppings and assemble quinoa, roasted veggies, cilantro lime dressing, and toppings into two serving bowls
  6. Eat right away or save the ingredients separately and assemble when you’re ready to dig in!
