Garlicky Roasted Veggie Hummus

Say goodbye to store-bought hummus and hello to this UNREAL Garlicky Roasted Veggie Hummus! This recipe is sooo flavorful that my mouth is watering just typing this post. It’s packed with chickpeas, garlic, roasted red bell peppers, roasted onions, and roasted zucchini – the perfect hummus package! Pair with your favorite pita chips or fresh carrots and celery for a yummy snack.

  • 1 yellow onion
  • 1 red bell pepper
  • 1 zucchini
  • 1/2 tsp. sea salt
  • 1/2 Tbsp. olive oil
  • 2 cups chick peas (canned and drained)
  • 3 cloves garlic
  • 1/2 cup tahini
  • 3 Tbsp. olive oil
  • sea salt – to taste
  1. Preheat oven to 400F
  2. Chop yellow onion, red bell pepper, and zucchini – place in medium mixing bowl and toss with 1/2 Tbsp. olive oil and sea salt
  3. Spread evenly onto baking sheet and place in oven for 30 min or until veggies are slightly charred
  4. While the veggies roast, combine the chickpeas, garlic, tahini, olive oil, and sea salt to food processor or blender – blend until smooth and well combined
  5. After veggies are roasted, remove from oven and place veggies into food processor or blender with hummus mixture – blend until well combined
  6. Add salt to taste or olive oil to thin
  7. Serve and store leftovers for up to 5 day – enjoy!

*yields ~ 2 cups hummus
