Mixed Berry Overnight Oats

Another variation of overnight oats is here! This Mixed Berry Overnight Oats recipe is so simple and delicious, it makes for the perfect breakfast for busy mornings. Whip all the ingredients together in a mason jar before you go to bed and wake up to a delicious, fresh, and quick morning meal!

Ingredients
  • 1/2 cup coconut milk or Cashew Milk
  • 1/2 cup rolled oats
  • 3/4 Tbsp. chia seeds
  • 1/2 – 3/4 Tbsp. honey
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  • 1/4 tsp. vanilla extract
Directions
  1. Place all ingredients into mason jar or sealable container – stir to combine
  2. Seal container and place in refrigerator for ~8 hours
  3. Enjoy cold or heat up in a saucepan on the stove – store in fridge for up to 3 days

*yields ~1 cup overnight oats
