Korean BBQ Cauliflower Tacos

There really are no words for these unreal Korean BBQ Cauliflower Tacos… If you’re looking for an easy, savory, and spicy dish – look no further. These oven baked cauliflower bites are crisped in a turmeric ginger batter and then dipped in a Korean BBQ sauce. Top these heavenly tacos with pickled carrots and radishes, green onion, and chili garlic sauce.

Ingredients
  • 1 large head cauliflower
  • 1 cup Cashew Milk or almond milk
  • 1/4 cup whole-wheat flour or brown rice flour – (if GF)
  • 1 tsp. ground turmeric
  • 1/2 tsp. ground ginger
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 3/4 cup korean BBQ sauce – I used this brand Sky Valley Korean BBQ Sauce
  • 3 Tbsp. olive oil
  • 2 Tbsp. water
  • 1 Tbsp. chili garlic sauce
  • 10 white corn tortillas
  • optional – pickled radishes and carrots
  • optional – green onions – chopped
Directions
  1. Preheat oven to 425F and line baking sheet with parchment paper
  2. Cut cauliflower into bite sized pieces – set aside
  3. Make batter – combine cashew milk, flour, turmeric, ginger, garlic, and salt in medium mixing bowl – whisk to combine
  4. Next, dip cauliflower one-by-one in batter and shake to remove excess batter – place on lined baking sheet, making sure not to over-crowd it so the cauliflower cooks evenly and gets nice and crispy
  5. Once baking sheet is full, drizzle 2 Tbsp olive oil over the cauliflower and place in oven for ~20 minutes or longer until desired crispiness is reached
  6. While cauliflower bakes, prepare the Korean BBQ sauce by placing Korean BBQ sauce, 1 Tbsp. olive oil, water, and chili garlic sauce in small mixing bowl – whisk to combine and set aside
  7. Once cauliflower is crispy, remove from oven and dip each cauliflower bite into Korean BBQ sauce mixture – place back on baking sheet and bake for another 20 minutes or until crispy
  8. Remove from oven and assemble tacos – crisp tortillas by heating a dry sauce pan on medium-high heat and flipping tortilla on it for ~1 min each side or until crispy
  9. Top with pickled radishes, carrots, green onion, and extra chili garlic sauce or Korean BBQ sauce – enjoy!

**Yields ~10 tacos
